Mamma mia!

BY AM EXPERIENCE | May 7, 2024

On Mother's Day, we celebrated and paid tribute to all the talented mothers who are part of our team. This year, we decided to surprise them with a special gift: a pot of basil, symbolizing the growth and vitality they bring not only to their families, but also to our work environment. We also shared a delicious pizza recipe, perfect for making with children. We want to encourage moments of connection and sharing between mothers and children, celebrating not only their incredible work, but also their essential role as dedicated mothers.

Here's the recipe, to encourage more sharing!

375 g whole wheat flour
375 g wholemeal spelt flour
11 g baking powder
480 ml warm water
1 teaspoon salt

2 tbsp tomato sauce (preferably homemade)
1 buffalo mozzarella cheese
1/3 zucchini
8 cherry tomatoes
8 olives
1 tablespoon olive oil
Oregano to taste
Fresh basil to taste

In a large bowl, dissolve the baking powder in the lukewarm water and leave to stand for 5 minutes.

In another bowl, mix the flours and salt.

Gradually add the flours to the water with the baking powder and mix well with your hands until the dough comes away from the bowl.

Place the dough on a worktop sprinkled with flour and knead for 10 minutes.

Shape it into a ball and put it back in the bowl. Cover with a cloth and leave to rest for at least 2 hours, until it has doubled in size.

At the end of the dough's rising time, knead it again on the worktop for 5 minutes.

Form a ball and divide into 4 equal parts. Make small balls with these parts, cover with a cloth and leave to rest for 30 minutes.

Use one ball of dough for the homemade pizza and reserve the others.

Tip: Wrap the remaining balls in cling film and store in the freezer.

To form the base of the pizza, roll it out with your hands into a thin, round dough. Place it on a wooden board.

Spread the tomato sauce on the base of the dough, add sliced zucchini, halved cherry tomatoes, sliced black olives and slices of buffalo mozzarella cheese to taste.

Season with oregano and bake at 180ºC for 20 minutes or until the cheese has melted.

Serve hot with a drizzle of olive oil and fresh basil leaves.

Buon appetito!
